Tamil Nadu is also famous for its filter coffee, the making of this coffee is almost a ritual. Today am taking you all to Ooty, the queen of hill stations for its street food called Varki/Varkey. Ooty Varkey or Varki is a kind of snack available in roadside teashops in Ooty.

She had experimented a couple of times before arriving at the perfect recipe that yielded a flaky Varkey.

You can add different flavors like chocolate essence, vanilla essence, cinnamon or espresso. I have not added any nuts or any other flavors. Nuts like crushed pistachios, pecans or almonds make for a good choice.
Lift each stripe, pull some dough from it and roughly make it into a round shape pinching the top. Fold 1/3rd of the rectangle inside and fold the opposite side also inside to form a letter fold.

Years back, I tried some varkis during our road trip and felt that they were like some flaky pastry I made some times back. If you want to bake them at your house, read on. Its crumbly too and you can't actually stop with one. I was planning to make Plain baked varkey and some chocolate stuffed varkay as I have to blogs to post this mandatory post. A non-vegetarian lunch, includes curries or dishes cooked with mutton, chicken or fish.
